I downloaded a bunch of new aircraft from here. I can do that and get them to the "SimObjects" folder with no problems. When I open the game all the planes are missing. I understand I have to edit a ".cfg" file. I don't know how to do that and I don't know what I even have to edit. Can someone help me?

I read it but I'm still confused on what I need to edit. I have no problem downloading the editor for .cfg files I just need to know what needs editing.

I just had a look at this aircraft.cfg editor. It appears to be useful once you understand the basics of the aircraft.cfg. In other words, it merely lets you execute tasks / edits faster but is probably useless if you don't know what you are looking at.

It would help if you told us why you think you NEED to edit the aircraft.cfg in the first place. To simply install an add on aircraft this is usually not necessary. Copy and paste the contents of the Readme file here into your next post to give us a clue.
