Airplane turns sharply when beginning to take off

When beginning to take off, my airplanes wants to turn sharply in only one direction. On the virtual cockpit screen the yoke is turned all the way and I can only hold it straight with some difficulty

You need to go into, settings/control axis, choose your controller for rudder and calibrate. Also add a little ( null zone ) too your rudder axis by moving the slider a little from extreme left to right.

It may also be that your autopilot is on right from the start, and (wrongly) configured to go some direction - which it attempts to do as soon as your landing gear leaves the ground.
I had this once or twice.

Which aircraft are you talking about? The Piper Cub maybe?
