Your question is more than general JJB and so it will be the answer...
Programs that not running doesn't slows down your system but the disk space they get push your Hard drive more so probably a reduce of the speed could be caused.
Unistalling programs doesn't mean that you totally clean your system from them. You have to delete the folder they create in your Program Files and also clean up your registries.
If you had run a benchmark program before and after your unistall you could have a better view. But it a little complicated process from specific utilities which i dont suggest if you are not good at hardware.
Friendly suggestion.Never install more than 2 games in your system.Finish them one by one.The clearer a system is the better perfromance you get.

You may get some small speed increase by uninstallig programs(defrag the H/D afer you have uninstalled for best results)
Every time you add something to your H/D,Windows will put an entry into the regestry, and this is where things get bogged down
There is only one real way to get top performance out of your PC and that is to reinstall Windows "fresh"
Registry cleaners can help a little, but nothing beats a clean install
Some people reinstall every 3 or 6 months
To keep a PC running at its best
Try not to fill up the H/D
Defrag at least once a month(weekly is ideal)
Keep A/V upto date
Allways use a firewall
Run some adware program daily
Clean up after you have surfed the net via internet options or 3rd party add on _________________
