Puppy,
Without trying to sound too weird here, you need to either try out a Bell 206 for a few flights in FS and see what your joystick/pedals/throttle can do to make the aircraft behave, or just bag it if you don't like the experience. Takeoff, flight, landing, hover. It's a whole different thing. If you want some real instruction on these techniques, try the hovercontrol website:

You can get some great instruction and a lot of tips from these rotorheads. WARNING: As they say about heroin, first one is free. After that you are hooked. That's what happened to me. I was a 4000 hour Air Force transport jock and now find myself totally hooked on helicopters. Go figure. |

Puppy,
You're right- the nose position determines where you go and how fast, and the collective determines how much lift you're demanding from the rotors. (Angle of attack)
The rest is simply about getting a feel for it. It really is a case of practice, practice, practice. Once you've sussed helos, there's no more satisfying feeling.
I fly all sorts of aircraft on FSX, but by far my favourite are helos.
Take care,
