Combat Flight Simulator and Live Action Role Playing

I guess this is a rather rare question...

I am trying to locate a flight simulator to give more realism to my LARP games, and simulate travel and other features ( including combat ).

a) Is there any way to implement old planes ( those of the '20 and '30 )?
b) Can I use multiple monitors in order to have one for the cockpit, another one for the instruments and two more for the side views? ( all at the same time, of course )

Flight Sim 2004 and very soon Flight Sim X will do both a and b for you with some downloads like:

You can load aircraft from the Wright brothers to today's airliners, fighters or GA aircraft.

But! No combat, it's a flight simulator not a game.
