I put my autopilot on, put the desired altitude in the altitude select window, put on alt hold, but it won't hold.

How do you know the AP is on? Describe what's happening in detail.

    1. Will the aircraft follow the heading bug with HDG selected?
    2. What altitude are you at when you hit ALT?
    3. What is the new altitude?
    4. Does the VSI go a a reading for a climb or descent?(Altitude above or below you current altitude).
    5 What's your speed?
    6. Does the ALT button illuminate?
    7. Is the flight director(FD) bars on?
    8. Try turning OFF the AP, do you get a warning tone?

Who made the airplane you downloaded?

And if you set it and it goes down and crashes maybe you should pull up so it doesn't?

I downloaded the file from the web address above, unzipped the file and placed the folder(as a whole) in my Aircraft folder of FS9. It shows up fine and fly's fine, just like the default 737-400. Altitude hold and level off works fine.

Check that your default B737-400 works correctly.
Delete the 737-300 folder you downloaded.
Turn off your anti-virus while downloading(you can scan the file after DL), it may be interfering.
Download the 737-300 file again placing the whole folder in the Aircraft folder within FS9 or FS8 in your case.

Somethings is corrupted, you may have to remove and reinstall FS. You may be able to copy the Boeing 737-400 original file from your installation disk. That's the end of my knowledge, good luck and let us know how you make out. I'm sorry that I couldn't have been more helpful.
